And while this recipe is so straightforward you may not need any tips, I do have a few – just in case.
- Don’t use overripe bananas. Choose yellow fruit, not those with brown spots or hints of green. Overripe bananas will turn to mush, while underripe ones won't be as sweet.
- Slice consistently. Cut the banana slices exactly 1/4 inch thick. Thinner slices may become mushy, and thicker ones won’t cook through evenly.
- Let the batter rest. Just five minutes is enough to allow the flour to hydrate and results in a fluffier pancake coating.
- Use tools for dipping. A fork or skewers work well to ensure the fruit is fully coated.
- Maintain a consistent temperature. Adjust the heat under your skillet or griddle as needed. If it gets too hot, you’ll burn the outside before the batter cooks through.

NOTE: I don't recommend freezing banana pancake bites because bananas typically turn mushy after thawing.
But if you really want to, flash freeze them until solid, then move them to a freezer bag for 1-2 months. Reheat from frozen as instructed above.
