These chewy apricot and oat bars are some of my faves. Here’s the recipe:
For the Bars
- 1 cup quick oats
- 3/4 cup dried apricots, finely chopped
- 1 ripe banana, mashed
- 1/4 teaspoon salt
- 1 egg
- 1/4 cup whole milk
- 1/4 cup shredded coconut
- 2 tablespoons melted butter
For the Topping
- 1 cup white chocolate chips
- 2 teaspoons coconut oil
Here’s how to make them:
- Preheat oven to 350°F and line a 9×9-inch baking pan with parchment paper.
- Mix the eggs and milk until smooth, then stir in the rest of the bar ingredients. Pour the batter into the baking pan, and bake for 15-20 minutes. Remove them from the oven and leave to cool.
- When the bars are cool, melt the chocolate and oil in the microwave in 20-second intervals. Stir until smooth.
- Pour the chocolate over the bars and pop the pan in the fridge to set. Then slice, serve, and enjoy!
