And making them is as satisfying as eating them. Check out the simple steps:

1. WHISK the flour, sugar, baking powder, cinnamon, and salt in a medium bowl.

2. ADD the milk and whisk gently until just combined.

3. HEAT a non-stick skillet over medium heat and grease lightly with butter or oil.

4. PAT dry the banana slices, dip them into the batter, and let the excess drip off.

5. COOK for 1–2 minutes until bubbles form and edges set. FLIP and cook until golden.

6. SERVE with maple syrup, powdered sugar, or whipped cream. ENJOY!

Tips for the Best Mini Banana Pancake Bites

Whether you pair them with coffee, tea, or just a big smile, these pancake bites make mornings feel just a little bit brighter.

And while this recipe is so straightforward you may not need any tips, I do have a few – just in case. 

  • Don’t use overripe bananas. Choose yellow fruit, not those with brown spots or hints of green. Overripe bananas will turn to mush, while underripe ones won’t be as sweet.
  • Slice consistently. Cut the banana slices exactly 1/4 inch thick. Thinner slices may become mushy, and thicker ones won’t cook through evenly.
  • Let the batter rest. Just five minutes is enough to allow the flour to hydrate and results in a fluffier pancake coating.
  • Use tools for dipping. A fork or skewers work well to ensure the fruit is fully coated.
  • Maintain a consistent temperature. Adjust the heat under your skillet or griddle as needed. If it gets too hot, you’ll burn the outside before the batter cooks through.
  • Topping suggestions. Maple syrup, powdered sugar, whipped cream, chocolate drizzle, or crushed nuts are all yummy. Fresh berries, peanut butter, honey, or a dusting of cinnamon sugar also work nicely.

How to Store

Once you try these, you’ll start looking for excuses to make them all the time. Luckily, they come together quickly!

As for storing, they’re best enjoyed the day you make them – before the bananas start to brown.

To Store: Place cooled pancake bites in an airtight container and refrigerate overnight. For best results, place parchment paper between layers to prevent sticking.

To Reheat: Warm leftover bites in the microwave in 15-20 second increments until heated through. Alternatively, reheat in an air fryer at 325 degrees for 3 to 4 minutes to restore crispness.  

NOTE: I don’t recommend freezing banana pancake bites because bananas typically turn mushy after thawing.

But if you really want to, flash freeze them until solid, then move them to a freezer bag for 1-2 months. Reheat from frozen as instructed above.

Ingredients

  • 1/2 cup all-purpose flour

  • 1 tablespoon sugar or maple syrup

  • 1 teaspoon baking powder

  • 1/4 teaspoon cinnamon

  • 1/4 teaspoon salt

  • 1/2 cup milk (dairy or non-dairy)

  • 2 medium bananas, sliced into 1/4-inch thick rounds

Instructions

  • In a medium bowl, whisk the flour, sugar, baking powder, cinnamon, and salt.
  • Make a well in the center, add the milk, and then whisk gently until just combined.
  • Warm a non-stick skillet or griddle over medium heat and lightly grease it with butter or oil.

Notes
