  • Large Egg: It’s fried until the egg white sets, but the yolk is still runny.
  • Full-Fat Feta Cheese: It crisps up beautifully when fried. For the best results, use a fresh block of feta packed in brine.
  • Black Pepper: Just a pinch to taste.
  • Crushed Red Pepper Flakes: For a spicy kick! For a mild version, simply omit them.
  • Flour or Corn Tortilla: Flour or corn both work. Pick your favorite!
  • Avocado: It adds a creamy, buttery that complements the runny egg yolk.
  • Lime Wedge: It enhances the flavor with a fresh, citrus twist. 
  • Fresh Chives: Add a sprinkle to make the final dish pop.

How to Make Feta Fried Eggs

Have 10 minutes to spare? That’s all you need to create this irresistible egg dish and still make it out the door!

1. Preheat. Heat a small nonstick skillet over medium heat.

2. Add the feta. Sprinkle the crumbled feta around the edges of the skillet, leaving space in the center. Cook the cheese until it melts and lightly bubbles.

3. Crack the egg into the middle. Sprinkle with black pepper and red pepper flakes, if using.

4. Cover the skillet with a lid. Reduce the heat. Cook until the egg white sets, the yolk is runny, and the cheese crisps.

5. Mash the avocado onto the warmed tortilla. Squeeze fresh lime juice over the top.

6. Transfer the feta fried egg onto the prepared tortilla. Garnish with finely chopped chives. Serve immediately and enjoy!

Tips for the Best Feta Fried Eggs

Achieving the ideal cook with this recipe can get a little tricky. So be sure to follow these tips.

  • Change up the cheese. Instead of feta, try other cheese like mozzarella, goat cheese, cotija, or Parmesan.
  • Quality is key. Use a high-quality nonstick skillet to prevent sticking. It makes it much easier to remove the egg and feta without breaking the yolk.
  • Watch the temp. Monitor the feta to prevent burning. If the cheese browns too quickly, lower the heat.
  • Timing is everything! Add the egg as soon as the feta begins to melt to prevent the cheese from burning while the egg cooks.
  • Get the tortilla toasty. Char tortillas over an open gas flame for 15-20 seconds per side. Or, broil in the oven until warm and pliable.
  • Add tasty toppings. Enhance the overall flavor with your favorite toppings! Try things like pickled onions, chili oil, diced tomatoes, or pesto.

How to Store

Like many fried egg breakfasts, this dish is best enjoyed immediately. Although, we wouldn’t want those leftovers to go to waste!

To Store: Store leftovers in an air-tight container. Refrigerate for up to 2 days.

To Reheat: Reheat in a pan or microwave for a few minutes until warmed through. Just know that reheating may alter the texture, making the egg less runny and the feta less crispy.

Ingredients

  • 1 large egg

  • 1/3 cup full-fat feta cheese, crumbled

  • Freshly ground black pepper, to taste

  • Crushed red pepper flakes (optional)

  • 1 (6-inch) flour or corn tortilla, warmed

  • 1/4 avocado

  • 1 lime wedge

  • 1 tablespoon fresh chives, finely chopped

Instructions

  • Heat a small nonstick skillet over medium heat.
  • Scatter the crumbled feta around the edges of the skillet, leaving space in the center. Allow the cheese to melt and bubble lightly.
  • Crack the egg into the middle of the skillet. Sprinkle with freshly ground black pepper and a pinch of red pepper flakes, if using.
  • Cover the skillet with a lid and reduce the heat to medium-low or low if the feta browns too quickly. Cook until the egg white is set, the yolk remains runny, and the cheese crisps up around the edges.
  • While the egg is cooking, mash the avocado onto the warmed tortilla. Squeeze fresh lime juice over the top.
  • Carefully transfer the feta fried egg onto the prepared tortilla. Sprinkle finely chopped chives on top. Serve immediately and enjoy!
