How to Make Strawberry Cheesecake Lush

This lush treat couldn’t be easier! 

1. Make the Oreo crust. In a food processor, pulse the Golden Oreos into fine crumbs. Mix the crumbs with the melted butter until well combined. Press the mixture into the bottom of a greased 9×13 inch baking dish. Freeze for 1-2 hours.

2. Prepare the cream cheese layer. In a large bowl, beat the softened cream cheese, powdered sugar, and vanilla extract until smooth. Fold in 1 cup of the Cool Whip until well combined. Spread this mixture evenly over the chilled cookie crust.

3. Make the pudding layer. In another bowl, whisk together the instant cheesecake pudding mix and milk for 2 minutes. Let stand for 5 minutes to thicken. Spread the pudding mixture over the cream cheese layer.

4. Add the strawberry layer. Arrange the sliced strawberries evenly over the pudding layer.

5. Top with Cool Whip. Spread the remaining Cool Whip over the strawberries. Optionally, garnish with additional strawberry slices for decoration.

6. Chill and serve. Refrigerate for at least 3-4 hours, or overnight, before serving. Keep refrigerated until ready to serve.

These tips will make your lush truly shine! 

  • Consistency is key. Ensure the cookie crumbs are finely crushed and well mixed with the melted butter. This ensures an even crust that holds together well.
  • Soften it up. Ensure the cream cheese is softened to room temperature. That way, it blends smoothly with the other ingredients and doesn’t leave lumps.
  • Make it pretty. Arrange the sliced strawberries in a single, even layer over the pudding so each slice gets plenty of berry flavor.
  • Go wild with garnishes. Top with extra strawberry slices or crushed cookie crumbs just before serving for an attractive presentation.
  • Vary it up. Swap the Golden Oreos for graham crackers, shortbread, or another cookie. Use a sugar-free pudding mix or a different flavor like vanilla or lemon. Top with different fruits like raspberries or blueberries.

How to Store

To Store: Cover the pan with plastic wrap or a lid and store it in the fridge for up to 4 days. After that, the cookie crust may start to get soft and slightly soggy.

To Freeze: I don’t recommend freezing this dessert. The texture of the layers will change during the thawing process. If you must freeze, cover the pan tightly with plastic wrap and a layer of tin foil, and freeze for up to 2 months. Thaw in the refrigerator overnight before serving.

  • 6 tablespoons unsalted butter, melted

  • 8 ounces cream cheese, softened to room temperature

  • 16 ounces Cool Whip, thawed and divided

  • 1 package (3.4 oz) instant cheesecake pudding mix

  • 1 cup milk

  • 4 cups fresh strawberries, hulled and sliced
