Hi Kim. FIRST Ive made a few of your recipes YUM YUM. .But I have a dumb question I love baking doing cookies I seem to have 2 HUGE ISSUES.
#1No matter what recipe I try I NEVER get cream cheese frosting/icing correct. #2 again no matter what recipe I try I’ve tried ALOT of them, my royal icing separates EVERY time, in maybe a day or 2. Im sure you know sometimes needed longer then that. I use all good brand ingredients, I follow directions. I’m thinking it’s my stand mixer. I’m at my wits end. I don’t have a kitchen aid, but it’s a good one. I actually have BOUGHT 2stand mixers. I just don’t know what to do it’s very upsetting and costly. If I make something I want it perfect. Friends, Family, customers nobody has ever complained about taste..all I make tastes wonderful. But to ME..I KNOW how cream cheese icing is SUPPOSED to look an pipe, so I’m never happy with it..tastes super yummy. Same goes for royal icing it works looks great but if it sits for even like 2 hrs, flip bag over it will be all separated. I WANT BOTH. LOOK great..TASTE just as great. If you have any ideas PLEASE HELP.

There are a couple of reasons you might be having issues with the frosting/icing.
For the cream cheese frosting:
– if you over-mix it, it can split.
– if the ingredients are too warm or too cold, it can split
– if it’s kept out of the fridge, it can split
Here’s a recipe I use that always works for me.
It uses room temperature (not soft) butter and cold cream cheese.
It also uses cornstarch, which helps absorb some of the excess moisture from the cream cheese.
Before you begin, make sure the butter is soft enough that your finger will leave an indentation when gently pressed. But you shouldn’t be able to press right into the block.
Also, be sure you’re using full-fat cream cheese (the kind in a block) and that it’s cold, from the fridge.
Ingredients:
1/2 cup room temperature butter
1 cup powdered sugar (sifted if lumpy)
1 teaspoon cornstarch
1/2 cup full-fat cream cheese, from the fridge
Method:
1. Beat the soft butter with the powdered sugar and cornstarch until smooth.
2. Scrape the bottom and sides of the bowl a couple of times during this process.
3. Add half of the cream cheese, beat until smooth, then beat in the remaining half.
I recommend mixing on medium speed to avoid overbeating. Then, chill it in the fridge for about an hour.
When you need it, take it out of the fridge and let it sit on the counter for 10-15 minutes. Finally, mix it with a spatula and use it.
Store cream cheese frosted treats in the fridge.
For the royal icing:
– The longer it sits, the higher the chance of it splitting.
– Also, if it was particularly thin to begin with, it will more likely separate.
– Getting too warm or being made when it’s warm can also cause splitting.
You can fix it (if it’s not been used yet) by adding it back to a bowl and mixing in a bit of extra sifted powdered sugar. Then you can use it.
But to prevent it, I recommend wiping your bowl with white vinegar or lemon juice on a paper towel to remove any oils before you begin.
Then, make a batch with meringue powder (and if you want to color it, use gel food coloring, not liquid)
Here’s a great recipe:
Ingredients:
2 cups powdered sugar, sifted (generic powdered sugar, not organic)
1.5 tablespoons meringue powder
4-5 tablespoons room temp water
Method:
1. Wipe the mixing bowl with white vinegar or lemon juice.
2. Add the sugar, meringue powder, and 4 tablespoons of water.
3. Stir the sugar into the water with a spatula, then beat with a whisk on medium for 1.5-2 minutes.
It’s ready when you lift the whisk out, and it drips back into the bowl and smooths out within 5-10 seconds.
– If it smooths out right away, it’s too thin and needs more powdered sugar.
– If it doesn’t smooth out after 10 seconds, add more water (1 teaspoon at a time).
Mix in 5-second bursts on medium until smooth.
Store it with plastic pressed to the surface and with a secure lid in the fridge. Warm at room temp for 5-10 minutes and mix well before use.
Also, let the cookies dry, uncovered, for 24 hours. Sometimes, they look dry and will even feel dry to the touch, but there’s a layer under the ‘crust’ that isn’t set.
