How to Make Sausage French Toast Roll-Ups

Making these roll-ups is even easier than making French toast! Just follow these steps.

1. Prepare the batter. Whisk the eggs, milk, cinnamon, nutmeg, and vanilla in a medium bowl until well blended. 

2. Roll the sausage. Flatten the bread slices thoroughly and cut off the crusts for clean edges. Once each piece is thin and even, add a cooked sausage link and roll the bread tightly around it

3. Coat. Heat the butter in a nonstick skillet over medium heat. Fully coat the roll-ups in the egg mixture. Let excess batter drip off.

4. Cook. Place the coated roll-ups in the buttered skillet. Cook, turning frequently, for 2-3 minutes per side. Work in batches, adding more butter as needed.

5. Serve. Remove the roll-ups from the skillet. Serve warm with maple syrup or powdered sugar, and enjoy!

This recipe is pretty self-explanatory, but I have a few tips to make these roll-ups shine.

  • Pick the best bread. Unlike real French toast, this recipe doesn’t work well with stale, dense bread. It can crack while rolling. Instead, use soft, fresh white bread for easy rolling and even cooking. 
  • Keep things secure. Once you’ve tightly rolled the bread around the sausage, seal it! Simply press gently along the final seam, and the bread should stick together. 
  • Dip, don’t soak! Dip the roll-ups quickly into the egg mixture, ensuring you coat all sides. However, don’t leave them submerged too long. If you do, they’ll become soggy while cooking. 
  • Get ahead of the game. Assemble the roll-ups ahead of time and refrigerate them. Then, dip and cook them fresh for a quick breakfast. 
  • Try a tasty twist. Savory options include cooked bacon, cheese, or scrambled eggs. Or use sweet fillings like Nutella, strawberry cream cheese, or cinnamon. 
  • Serve with scrumptious sides. I’ve already mentioned maple syrup for dipping and powdered sugar for coating. But you can also use whipped cream, honey, fresh berries, and more.

How to Store

Perhaps surprisingly, these roll-ups store and freeze quite well. Here’s what to do. 

To Store: Place the cooled roll-ups in an air-tight container. Refrigerate for 3 to 4 days. 

To Freeze: Arrange the roll-ups in a single layer on a baking sheet. Freeze for 1 hour, then transfer them to a freezer-safe container. Store for 2 to 3 months. 

To Reheat: Reheat chilled roll-ups for 10 to 12 minutes at 325 degrees. Or microwave in 30-second intervals until warm. Heat frozen roll-ups for 15 minutes in the oven at 350 degrees.
