Thanks to boxed cake and instant pudding, this poke cake recipe is insanely easy to make.

1. Preheat the oven to 350°F. Grease a 9×13-inch baking dish. Prepare the cake mix according to the instructions on the box. Pour the batter into the baking dish and bake as directed. Cool the cake completely.

2. Poke. Poke holes evenly across the cake using the handle of a wooden spoon.

Tips for the Best Funfetti Poke Cake

This cake is such a fun treat, no matter your age. I mean, how can you resist all those bright sprinkles and rich vanilla goodness? To make it even more irresistible, follow these tips.

  • Jimmy it up. Jimmies are the best sprinkles to use in Funfetti recipes. Unlike nonpareils, they hold their shape and color when baked.
  • Be patient. Be sure to completely cool the cake before poking holes and adding the pudding. This prevents the pudding from melting and becoming runny.
  • Poke carefully. Poke the holes deep enough to fill with pudding without poking all the way through. Otherwise, the filling will seep out of the cake.
  • Amp up the flavor. For a flavor boost, consider adding a teaspoon of vanilla or almond extract to the cake batter before baking.
  • Make it pretty. For extra color and texture, fold the sprinkles into the whipped topping.
  • Have fun! Try different variations by using flavored puddings like chocolate or strawberry. You can also top the cake with fresh berries or chocolate sauce.

How to Store

This cake gets better as it sits in the fridge, allowing the pudding to meld. It’s perfect for prepping for parties! Just be sure to follow these tips to keep it fresh.

To Store: Cover the cake tightly with plastic wrap or place in an air-tight container. Refrigerate for up to 4 days.

To Freeze: Double wrap the unfrosted cake tightly in plastic wrap. Freeze for up to 1 month. Thaw overnight in the refrigerator before adding toppings and serving.

This Funfetti poke cake is perfect for birthdays, parties, and more! The light vanilla flavor and sweet whipped topping are a true delight.

Ingredients

  • 1 (15.25 ounce) box Funfetti cake mix (plus ingredients listed on the box, usually eggs, oil, and water)

  • 1 (3.4 ounce) packet instant vanilla pudding mix

  • 2 cups milk

  • 1 (8 ounce) tub whipped topping (like Cool Whip), thawed

  • 1/4 cup rainbow sprinkles (optional, for topping)

Instructions

  • Preheat the oven to 350°F. Lightly grease a 9×13-inch baking dish. Prepare the Funfetti cake mix according to the instructions on the box. Pour the batter into the prepared dish and bake as directed (typically 28–32 minutes). Allow the cake to cool completely in the pan.
  • Use the handle of a wooden spoon or a straw to poke holes evenly across the cake, spacing them about 1 inch apart. Be sure to poke deep but not through the bottom of the cake.
  • In a medium bowl, whisk together the pudding mix and milk until it thickens slightly, about 2 minutes. Pour the pudding evenly over the cake, aiming to fill the holes. Spread the remaining pudding over the surface of the cake.
  • Cover the cake with plastic wrap or foil. Refrigerate for at least 2 hours or until the pudding sets.
  • Spread the thawed whipped topping evenly over the top of the cake. Sprinkle the rainbow sprinkles generously over the top.
  • Slice, serve, and enjoy!

Notes

  • Be sure to completely cool the cake before poking holes and adding the pudding. This prevents the pudding from melting and becoming runny.
  • Poke the holes deep enough to fill with pudding without poking all the way through. Otherwise, the filling will seep out of the cake.
