I don’t see why I should cook the flour down in a separate pan. Why not just mix it in when cooking the vegetables? I don’t believe this is the most economical use of my time. Checking with other recipes to verify but I’m sure this can be simplified while achieving the same results.

I loved this recipe. I really enjoy eating soup, year around and this one is the one that would be great even in the summer. The amounts were perfect for me as I am a widow. If I were still cooking for a family, I would’ve probably used 2 pounds of hamburger meat and possibly then extra amounts of all the other. I definitely would’ve had more meat in it, but this amount is perfect for me.

Just a bit of prep work, easy to toss together & enjoyed by all… Very filling. I use recipes as ‘suggestions’ so here’s my variation: 1 pound of gr beef, added cup & 1/2 fresh spinach, used 1.5 cups shredded carrots, 1/2 cup of diced red pepper, couple dashes of worcestershire sauce, 1 Tbsp red pepper flakes & switched out the (blegghh) velveeta for 2 cups shredded cheddar cheese (oopsie. Forgot sour cream, but didn’t need it).

THIS IS MY SECOND TIME MAKING IT. I ADDED A POUND OF BURGER BOTH TIME.
This recipe turned out well but I will definitely make it a day ahead before serving it to my guests. That night in the refrigerator really improved the taste and consistency.
This is a great recipe, but we are carnivores in this house! I really loved this recipe, but felt that half a pound of ground beef was not enough. The soup was very thin. I cooked the other half-pound of hamburger and added it to the soup. I think that extra half pound of hamburger would have benefited from being at the start of this recipe rather than an add in. It’s called cheeseburger soup for a reason! Lol. Just put the full pound of hamburger in it!
