Ingredients

  • All-Purpose Flour: The foundation that provides structure to the brownie bites, allowing them to hold their shape.
  • Unsweetened Cocoa Powder: It brings a rich chocolate flavor without added sugar, letting you control the sweetness.
  • Unsalted Butter: It adds fat and moisture for a tender, fudgy texture. Using unsalted lets you manage the salt content.
  • Granulated Sugar: It sweetens the batter and helps create a crackly, shiny top as the sugar caramelizes in the oven.
  • Salt: It balances the sweetness for a more complex taste.
  • Large Eggs: They bind the ingredients together, add moisture, and help the brownies rise slightly for a soft, fudgy center.
  • Vanilla Extract: It rounds out the chocolate flavor with subtle floral notes and depth.
  • Semi-Sweet Chocolate Chips: They make for an even fudgier experience.

How to Make Brownie Bites

These brownie bites are so easy to make!

1. Prep the pan. Preheat oven to 350°F. Grease a 24-cup mini muffin pan or line with mini cupcake liners.

2. Melt the butter. In a medium saucepan, melt the butter over medium heat. Remove from the heat and whisk in the sugar, cocoa powder, and salt until smooth. Allow to cool slightly.

3. Add the eggs. Whisk in the eggs one at a time until well combined. Stir in the vanilla extract.

4. Mix the batter. Fold in the flour just until no streaks remain. Stir in the chocolate chips.

5. Fill the cups. Scoop the batter evenly into the prepared mini muffin cups, filling each about 3/4 full.

6. Bake the brownies. Bake for 12-15 minutes, until the tops are set and a toothpick inserted into the center comes out with just a few moist crumbs.

7. Cool and serve. Allow the bites to cool in the pan for 10 minutes before removing and transferring to a wire rack to cool completely. Serve and enjoy!

Tips for the Best Brownie Bites

Follow these tips for the most decadent brownie bites!

  • Treat yourself! Splurge on good cocoa powder and chocolate for intense chocolate flavor in the bites.
  • Be gentle. Gently fold in the flour just until no streaks remain to avoid overmixing, which can lead to tough brownie bites.
  • Don’t overfill! Only fill each mini muffin cup about 3/4 full to prevent the batter from overflowing during baking.
  • Let the batter chill. Refrigerate the brownie batter in the muffin tin for 15-30 minutes before baking to get a fudgier texture and minimize spreading.
  • Give it a tap. Tap the filled mini muffin tin firmly on the counter before baking to remove any air bubbles in the batter.
  • Try fun mix-ins. Fold in finely chopped nuts, peanut butter cups, caramel candies, or crushed Oreos to the batter before baking for extra flavor and texture.
  • Get fancy with toppings. Top the cooled brownie bites with a drizzle of melted chocolate, caramel sauce, sprinkles, frosting, or a dusting of powdered sugar for a fancy finish.

These fudgy, chewy brownie bites pack all the rich chocolate flavor of a full-size brownie into a poppable two-bite treat. They’re impossible to resist!

Ingredients

  • 1/2 cup (1 stick) unsalted butter

  • 1 cup granulated sugar

  • 2/3 cup unsweetened cocoa powder

  • 1/2 tsp salt

  • 2 large eggs

  • 1 tsp vanilla extract

  • 1/2 cup all-purpose flour

  • 1/2 cup semi-sweet chocolate chips

Instructions

  • Preheat the oven to 350°F. Grease a 24-cup mini muffin pan or line with mini cupcake liners.
  • In a medium saucepan, melt the butter over medium heat. Remove from the heat and whisk in the sugar, cocoa powder, and salt until smooth. Allow to cool slightly.
  • Whisk in the eggs one at a time until well combined. Stir in the vanilla extract.
  • Fold in the flour just until no streaks remain. Stir in the chocolate chips.
  • Scoop the batter evenly into the prepared mini muffin cups, filling each about 3/4 full.
  • Bake for 12-15 minutes, until the tops are set and a toothpick inserted into the center comes out with just a few moist crumbs.
  • Allow the brownie bites to cool in the pan for 10 minutes before removing and transferring to a wire rack to cool completely. Serve and enjoy!

Notes

  • Melting the butter with the sugar and cocoa helps bloom the cocoa for a richer flavor and dissolves some of the sugar for a shiny, crackly top.
  • Be careful not to overbake the brownie bites or they will dry out. You want moist crumbs on the toothpick, not a completely clean toothpick.
  • For an extra decadent treat, drizzle the cooled brownie bites with melted chocolate or top with a swirl of chocolate frosting.
