How to Make Breakfast Burritos

1. COOK the sausage in a skillet over medium-high heat until browned, breaking it into crumbles. Remove and set aside.

2. SCRAMBLE the eggs with salt, pepper, and 1/2 cup of cheese until cooked and creamy. Remove from heat.

3. WARM the tortillas in the microwave for 15-20 seconds to make them pliable.

4. ASSEMBLE each burrito: sprinkle remaining cheese on the tortilla, then layer with eggs, sausage, tomatoes, avocados, and optional cilantro.

5. ROLL the tortillas tightly, folding in the sides first.

6. SERVE immediately with salsa, sour cream, or hot sauce on the side. Enjoy!

I’m a big fan of chicken burritos. But I crave these breakfast burritos almost every morning. 

Soft eggs, meaty sausage, and creamy avocado – it’s like a breakfast party wrapped in a tortilla!

And these tips will ensure they turn out perfect:

  • Don’t overstuff. I know it’s tempting, but don’t overfill your tortilla! Otherwise, rolling them up will be challenging.
  • Folding technique. Place the fillings in a line down the center of each tortilla. Next, fold in the sides, then roll tightly from one end to ensure a neat burrito.
  • Add salsa. Burritos plus salsa are a match made in heaven! Serve it on the side or inside for the ultimate flavor combo. 
  • Meat options. Use breakfast or Italian sausage, chorizo, or even chicken sausage if you like. Alternatively, omit the meat and add veggies or black beans for protein.
  • Variations. Add roasted potatoes or hash browns, spinach, roasted sweet potatoes, queso fresco, bacon, or crisp bell peppers. The options are endless.
  • Make ahead. If you don’t want to make the whole thing ahead, make the elements and store separately. Assemble from the fridge and bake (wrapped in foil) for 10-15 minutes.

Start your morning right with these hearty breakfast burritos, packed with savory sausage, fluffy scrambled eggs, creamy avocado, and gooey melted cheese.

Ingredients

  • 1 pound sausage meat (breakfast, Italian, chorizo, etc.)

  • 8 large eggs

  • 1/2 teaspoon salt

  • 1/4 teaspoon black pepper

  • 1 1/2 cup shredded cheddar cheese, divided

  • 6 large flour tortillas (10–12 inches)

  • 3-4 medium tomatoes, diced

  • 2 avocados, diced

  • 1/4 cup chopped fresh cilantro, optional

Instructions

  • In a large skillet, cook the sausage meat over medium-high heat, breaking it into crumbles with a wooden spoon until browned. Remove from the skillet and set aside.
  • In the same skillet, add the eggs, salt, pepper, and 1/2 cup cheese. Mix and stir until the eggs are cooked and the cheese is melted. Remove the skillet from the heat.
  • If needed, warm the tortillas in 15–20 second intervals in the microwave to make them pliable.
  • Lay each tortilla flat on a clean surface. Sprinkle the remaining cheese in the middle of each. Top with the cooked eggs and sausage meat, followed by the diced tomatoes and avocados. If using, sprinkle the cilantro on top.
  • Fold in the sides of the tortilla and roll it up tightly to form the burritos. Serve immediately with a side of salsa, sour cream, and a dash of hot sauce if desired. Enjoy!
