Tips for the Best Beef Nachos

I love how easy nachos are to customize.

My family enjoys refried beans, seasoned beef, and tons of cheese. But sometimes, I mix it up with shredded chicken, chorizo, or even BBQ pulled pork.

The possibilities are endless!

Follow these tips to make your nachos truly supreme!

  • Quality is key. Opt for 80/20 ground beef for a balance of flavor and juiciness.
  • Put in some elbow grease. Grate your own cheese for the best melting results. Pre-shredded cheese contains additives that prevent it from melting smoothly.
  • Choose the best chips. Use sturdy, restaurant-style tortilla chips that can withstand toppings without getting soggy.
  • Keep things even. Spread the toppings evenly across the baking sheets to ensure consistent cooking. This helps prevent some areas from being overcooked.
  • Pay attention! Keep a close eye on the nachos while they’re baking to prevent the chips from burning. The cheese should be melted and bubbly, but the chips should still be crisp.
  • Go wild with toppings. Experiment with different toppings to find your favorite combinations. Consider adding diced bell peppers, olives, or roasted corn.
  • Don’t hesitate. Serve the nachos immediately after baking while the cheese is still gooey, and the chips are crisp. This ensures the best texture and flavor.

How to Store

Nachos are best enjoyed right away. And they don’t store well, as the chips will turn soggy.

But if you have leftover meat, that will hold well in the fridge!

To Store: Transfer the cold seasoned beef to an airtight container and refrigerate for 3-4 days.

To Freeze: Transfer the cooled beef mixture to a freezer-safe container and freeze for up to 3 months. Thaw in the refrigerator before reheating.

To Reheat: Microwave the beef mixture in 30-second intervals, stirring between each, until hot, or reheat in a skillet over medium heat, stirring occasionally. Once reheated, assemble the nachos with fresh chips, cheese, and toppings for optimal taste.

Fully loaded beef nachos with seasoned meat, melted cheese, and sliced jalapeños, served over crispy tortilla chips for the perfect bite!

Ingredients

  • 1 tablespoon olive oil

  • 1/2 onion, finely diced

  • 1 clove garlic, minced

  • 1 pound ground beef

  • 1 (1 ounce) packet taco seasoning

  • 2 (16 ounce) bags tortilla chips

  • 2 cups shredded cheddar cheese

  • 2 cups shredded Monterey Jack cheese

  • optional toppings: sliced jalapeños, diced tomatoes, beans, sliced green onions, salsa, sour cream, guacamole, etc.

Instructions

  • Preheat the oven to 400°F. Line 2 baking sheets with parchment paper and set aside.
  • Warm the olive oil in a large skillet over medium-high heat. Add the onion and cook until softened, about 3 minutes. Add garlic and cook for 1 minute more.
  • Add the ground beef and cook, breaking it up with a spoon, until no longer pink, about 5 minutes. Drain excess fat.
  • Stir in the taco seasoning and 1/4 cup water. Simmer until the liquid has mostly evaporated, about 3 minutes.
  • Spread a layer of chips on the baking sheets. Top with the seasoned beef, then sprinkle generously with shredded cheese. If using, add toppings such as jalapeño slices or beans.
  • Bake for 10-15 minutes until the cheese is melted and bubbly. Watch carefully so the chips don’t burn.
  • Remove from the oven and immediately add any other toppings, such as diced tomatoes or sliced green onions. Serve immediately with salsa, sour cream, and guacamole on the side. Enjoy!

Notes

  • Use sturdy restaurant-style tortilla chips that can stand up to toppings without getting soggy.
  • Grate the cheese yourself for the smoothest melting. Pre-shredded cheese doesn’t melt as well.
  • Serve the nachos immediately after baking while the cheese is gooey and the chips are still crisp.
