How to Make Cinnamon French Toast Bites

Made with buttery brioche and kissed with vanilla, these little bites deliver all the comfort of traditional French toast but with an addictively fun twist.

They’re perfect for lazy Sunday brunches, holiday gatherings, or whenever you need a little extra magic in your morning.

Follow these steps to make them: 

1. CUT the bread into 1-inch cubes and set aside.

2. WHISK the eggs, milk, vanilla, and salt in a large bowl until smooth.

3. MIX the sugar and cinnamon in a medium bowl.

4. MELT the butter in a skillet over medium heat.

5. TOSS a few bread cubes in the egg mixture, let excess drip off, and COOK for 2-3 minutes per side.

6. TOSS them immediately in the cinnamon sugar and repeat with the remaining bread cubes.

7. SERVE warm with maple syrup, whipped cream, or fresh berries. Enjoy!

Tips for the Best Cinnamon French Toast Bites

What I love most about these cinnamon French toast bites is how versatile they are.

You can keep it simple with just the cinnamon sugar or go all out with maple syrup, whipped cream, and fresh berries.

Plus, they’re super easy to make, so you don’t have to be a kitchen pro to pull them off.

That said, I do have a few tips to keep in mind:

  • Use stale bread. Fresh won’t absorb the custard. If that’s all you have, cut it into cubes and bake it for about 10-15 minutes at 350°F until toasted.
  • Don’t have challah or brioche? You can also use French bread (non-garlicky) or Texas toast. I’d stay away from sourdough, though, as the taste and texture won’t be quite right.
  • Cut into even cubes. Cut the bread into 1-inch cubes, and make those cubes as uniform in size and shape as possible. The more alike they are, the more evenly they’ll cook.
  • Don’t over-soak. Toss the bread for about 10-20 seconds, ensuring each side gets at least 5 seconds in the custard. If you leave them submerged, they will get soggy. 
  • Preheat the skillet. French toast cooks best when your skillet is properly preheated. That’s what gives the cubes their crispy, golden crust. 
  • Don’t overcrowd the pan. Cook the bites in batches if necessary to ensure even cooking. If you need to keep them warm, cover loosely with foil on a plate. 
  • Get creative with the toppings! Maple syrup, whipped cream, and fresh berries are all excellent options. You can also use powdered sugar, chocolate or caramel sauce, chocolate chips, and more!

How to Store

Have French toast bite leftovers? Surprisingly, they store quite well!

To Store: Transfer cold leftovers to an airtight container and refrigerate for up to 3 days. Keep the cinnamon sugar coating separate to prevent sogginess. 

To Reheat: Warm the bites at 350°F for 5 to 7 minutes. You can also microwave them for 20 to 30 seconds, but that will make them soft rather than crispy.

Sweet and crispy, these cinnamon French toast bites are a fun and delicious twist on classic French toast. They’re easy to make and impossible to resist!

Ingredients

  • 6 thick slices stale brioche or challah bread

  • 2 large eggs

  • 1/2 cup milk

  • 1 teaspoon vanilla extract

  • pinch salt

  • 1/4 cup granulated sugar

  • 1 teaspoon ground cinnamon

  • 2 tablespoons butter, for frying

Instructions

  • Cut the bread into bite-sized cubes, about 1-inch each. Set aside.
  • In a large bowl, whisk the eggs, milk, vanilla extract, and salt until smooth and well blended.
  • In a medium bowl, mix the sugar and cinnamon until well combined.
  • Warm the butter in a large skillet over medium heat. When melted, quickly toss a few cubes of bread in the egg mixture. Let the excess drip off, then place in the skillet and cook for 2-3 minutes per side.
  • Remove the bites from the skillet and immediately toss in the cinnamon sugar. Repeat with the remaining bread.

Notes

  • Use stale bread, as fresh won’t soak up the custard. If brioche or challah isn’t available, use French bread or Texas toast.
  • Cut the bread into evenly sized cubes, and don’t over-soak them. 5-10 seconds on each side is all they need.
