1. Italian Meatloaf (Cheese Stuffed)

This is basically your classic meatloaf, but better! It’s oozing with delicious, gooey, warm cheese. 

This recipe is like a classic meatloaf in many ways.

It has Italian seasonings, a bread-like binding agent, and tomato-based sauce. It’s meaty, savory, and super tasty. 

However, this recipe differs in two ways. Rather than breadcrumbs, it uses saltine crackers for binding and flavor.

They’re also a lot more cost-effective than breadcrumbs.  

And of course, unlike regular meatloaf, this one is brimming with cheese.

There’s cheese inside and melted over the top. It’s amazing.

2. Mozzarella-Stuffed Meatloaf

I’ve found that there are two styles of “classic” meatloaf. And while they have many commonalities, they’re distinct. 

There’s the Italian style that’s essentially a giant meatball in sauce (like the recipe above).

Then, there’s the American recipe that features a sweet-savory, BBQ sauce-like glaze. 

That’s what this mozzarella-stuffed meatloaf is like. It’s a classic American meatloaf stuffed with melted mozzarella, and it’s delicious. 

You use Worcestershire sauce in both the meat mixture and the sauce. That means that everything is a bomb of umami. 

3. Bacon-Wrapped Cheese-Stuffed Meatloaf

If a bacon cheeseburger and beef Wellington had a baby, it would look something like this.

Sadly, no pastry is involved. (But how amazing would that be? Someone try it.)

Like a Wellington, this meatloaf contains layers of deliciousness. It’s beefy, it contains some veggies, and it’s wrapped in a delicious shell.

This shell just happens to be made of bacon. 

Like a good bacon cheeseburger, this meatloaf is juicy and hearty.

4. Spinach and Mushroom-Filled Rolled Meatloaf

This rolled meatloaf will send you straight to flavor town. It looks fancy and tastes amazing.

This meatloaf features a trio of pork, beef, and veal for maximum flavor and texture.

It has just the right amount of fat, so the meat is juicy and soft. Honestly, it’s delectable. 

The filling consists of sauteed onions, mushrooms, spinach, and parmesan cheese. The result is robust, earthy, salty, and slightly sweet. 

5. Stuffed Meatloaf (Cheese, Roasted Red Peppers, Basil, and Ham)

If you love the juxtaposition of sweet and savory in your dishes, try this meatloaf.

It strikes the perfect balance between the two flavors. It’s seriously so good. 

On the savory side, you have salty cheese and juicy beef. On the sweet side, you have a delicious brown sugar and ketchup glaze. 

Ham, roasted red peppers, and basil play on both sides. Each ingredient is savory but also slightly sweet. 

If you’ve seen the show Salt, Fat, Acid, Heat (or read the book), this meatloaf exemplifies those elements. The result of everything together is flavor heaven. 

6. Meatloaf Stuffed with Mashed Potatoes

There’s no need for a side dish because this is a whole meal in one! It’s sweet, savory, and delicious.

I guarantee that this will please every palate from kids to adults.

The ground beef mixture is a world of umami.

It’s seasoned with mustard, apricot ketchup glaze, onion and chive cream cheese-soaked bread, and parmesan. 

Then, it’s stuffed with sharp cheddar cheese and creamy mashed potatoes.

More of the apricot jam and ketchup glaze is brushed on top. You simply can’t go wrong here. 

7. Feta Cheese and Pepper-Stuffed Meatloaf

Take a trip to the Mediterranean with this delicious meatloaf.

You can find meatloaf-like dishes all around the region, spanning three continents. 

This particular meatloaf utilizes flavors partial to southern Europe and the Middle East. Think roasted meats, fresh herbs, and bold flavors. 

And this meatloaf is no exception. It features a succulent, perfectly seasoned beef mixture. It’s stuffed with feta, mozzarella, and roasted red peppers. 

Finally, it’s topped with a delicious, savory marinara sauce. It’s sweet and savory with deep, rich flavors. 

8. Macaroni Cheese-Stuffed Meatloaf

Um. Yes, please! I know I said it before, but even meatloaf haters will love this recipe. It’s like a whole southern barbecue in one dish. 

You start with your basic meatloaf meat mixture- beef, onions, breadcrumbs, seasonings, and an egg.

This recipe uses a little honey barbecue sauce in the meat mixture, too. 

Then, you stuff it full of premade macaroni and cheese. You can use whatever brand you like.

This recipe calls for the Bob Evans brand, but I love Panera’s version. 

Towards the end of the baking time, the meat gets a simple glaze.

The result is a creamy, cheesy, messy dinner that everyone will gobble up quickly.  

9. Veggie-Stuffed Meatloaf

Do you have a hard time getting your family to eat their vegetables? This veggie-stuffed meatloaf is the solution. 

It uses a mix of pork and beef, plus all of the usual suspects. It’s a moist, yummy, slightly sweet meatloaf.

But the real magic happens inside the meat. This recipe calls for two kinds of cheese, spinach, red onion, and tomatoes.

You can totally customize the veggies. Zucchini, carrots, kale, and mushrooms are great options. 

10. Cheese-Stuffed Taco Meatloaf

Switch it up on Taco Tuesday with this delicious cheese-stuffed taco meatloaf. It’s bold, spicy, and super indulgent. 

It’s just like making a regular meatloaf, but with a few Tex-Mex swaps.

Instead of a sweet glaze, you use taco sauce. Instead of breadcrumbs, you use crushed Doritos! 

It contains taco seasonings instead of Italian. And, of course, you stuff it with lots of cheese. This recipe uses pepper jack for a little kick. 

Serve with all your favorite taco toppings! I like guacamole, pico de gallo, and sour cream. However you top it, I know everyone will love it.
