Ingredients
1 1/2 cups all-purpose flour
3/4 cup sugar
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon salt
1 large egg, room temperature, lightly beaten
1/2 cup canola oil
1/4 cup 2% milk
1 tablespoon lemon juice
1 teaspoon vanilla extract
1 cup shredded zucchini
1/4 cup miniature semisweet chocolate chips
1/4 cup chopped walnuts
Instructions
- Preheat the oven to 350 degrees Fahrenheit (175°C) and line a muffin tray with paper liners.
- In a large bowl, mix the flour, sugar, baking soda, cinnamon, and salt.
- In a separate bowl, beat the egg, then add in the oil, milk, lemon juice, and vanilla. Mix well.
- Add the wet ingredients to the dry ingredients, and stir just until moistened.
- Fold in the zucchini, chocolate chips, and walnuts.
- Fill the muffin liners about two-thirds full.
- Bake for 20-25 minutes or until a toothpick inserted in the center comes out clean.
- Allow the muffins to cool before serving. Enjoy!
