How to Make Cheeseburger Casserole

As the name suggests, this is a baked pasta dish. But don’t worry, the prep is super quick.

1. Preheat the oven to 350 degrees Fahrenheit and grease a 2-quart baking dish with cooking spray.

2. Cook the beef and onions. This should take about 5-7 minutes. Break up the beef with a wooden spoon and keep stirring until it’s evenly browned.

3. Add the rest of the ingredients. That’s the tomatoes and liquid, macaroni noodles, corn kernels, chopped bell pepper, and spices. Bring to a boil, then turn off the heat.

4. Assemble the cheeseburger casserole. Pour half of the beef mixture into the greased baking dish. Sprinkle it with 1 cup of shredded cheese. Repeat.

5. Bake the casserole. Cover the dish with foil and bake it for 30 minutes. Remove the foil and bake for 15 more minutes.

  • Try other pasta shells. Elbow macaroni is a classic choice, but rotini or mini shells work well, too. Check the package if you’re using alternative pasta, as cooking times may vary.
  • Replace beef with other ground meats. You can’t go wrong with turkey or pork.
  • Spice it up with salsa. Or hot sauce. Or sriracha.
  • Transform the casserole into a Bacon Cheeseburger Helper. Just add chopped-up bacon to the beef mixture. You can top the casserole with bacon crumbles, too.

  • 1 pound ground beef

  • 2 medium onions, chopped

  • 1 (28-ounce) can diced tomatoes with herbs, undrained

  • 1/2 cup water, more if needed

  • 2 cups elbow macaroni

  • 1 cup frozen corn kernels

  • 1 green bell pepper, chopped

  • 2 tablespoons minced garlic

  • 1 tablespoon soy sauce

  • 1 tablespoon chili powder

  • 1 teaspoon Italian seasoning

  • Ground black pepper, to taste

  • 2 cups shredded Mexican cheese blend


  • Preheat the oven to 350 degrees Fahrenheit. Grease a 2-quart baking dish with cooking spray.
  • Combine and cook the ground beef and onions in a large saucepan over medium-high heat. Continue for about 5 to 7 minutes, or until the beef has browned and the onions are translucent. Drain.
  • Drain the tomatoes and pour them into a 4-cup liquid measuring glass. Add water to make 2 1/2 cups of liquid.
  • Add the tomatoes plus the liquid, macaroni, corn, bell pepper, garlic, soy sauce, chili powder, Italian seasoning, and pepper to the beef mixture. Bring it to a boil.
  • Pour half of the beef mixture into the greased baking dish. Cover with 1 cup of cheese. Repeat with the remaining beef and cheese. 
  • Cover the dish with foil and place it on a baking sheet. Bake for 30 minutes and remove the foil. Then bake for another 15 minutes, or until the macaroni is al dente. Let it cool for 10 minutes. Enjoy!
